WE RECOMMEND A NICE THICK CUT PRIME RIB OR SIRLOIN
INGREDIENTS
• 220 g bocconcini / baby mozzarella , torn
• 500 g Large tomatoes , cut in quarters
• Coarse salt and ground black pepper
• 1/2 cup basil leaves , torn or roughly chopped
• Handful wild rocket
• Generous drizzle of good quality olive oil
STEPS
Drizzle the tomatoes with olive oil and season with salt and pepper. Set aside for a while.
Gently toss the basil, wild rocket and bocconcini thru the tomatoes and oil, transfer to your plating dish. Serve as is.
